At Jayger, every knife starts as raw steel and ends as something worth keeping. Whether you're after a Damascus chef knife that handles a kitchen with precision, a hunting blade built for the field, or a bespoke piece commissioned for a gift — each knife is hand-forged to order from our workshop in Nottingham.

We don't mass-produce. We forge, grind, heat-treat, and finish each blade individually, which means the knife you receive has been made for use, not just for display.

Our Knife Collections

Damascus Steel Knives

Forged from 1095 and 15N20 high-carbon steels, pattern-welded to produce the characteristic flowing grain. Hunting knives, chef knives, pocket folders, seax blades and more.

Chef & Kitchen Knives

Japanese-style santoku to full-size Western chef knives. Damascus and carbon steel options, with handles in stabilised wood, micarta, and resin.

Hunting & Bushcraft Knives

Fixed-blade knives for the outdoors — skinning knives, bowie knives, bushcraft blades and camp choppers. Full-tang construction, leather sheaths included.

Pocket & Folding Knives

Compact, well-balanced folding knives for everyday carry. Liner-lock and back-lock mechanisms, Damascus and carbon steel blades.

Steak & Table Knives

Hand-forged carbon steel steak knives, sold individually or as matched sets. A serious upgrade over anything you'll find on the high street.

Why Choose a Handmade Knife?

A machine-made knife is consistent. A hand-forged knife is considered. The smith makes decisions at every stage — the grind geometry, the heat treat, the handle fit — that a production line cannot. The result is a blade with better balance, a more refined edge, and a character that develops with use.

Handmade knives also last. With proper care, a well-forged carbon steel or Damascus blade will outlast generations of stamped steel alternatives. That's why so many of our customers come to Jayger for gifts, heirlooms, and pieces they intend to pass on.

Caring for Your Knife

Damascus and carbon steel knives require a little attention to stay at their best.

  • Wash by hand with warm water and mild soap immediately after use. Never in a dishwasher.
  • Dry thoroughly — moisture is the primary cause of surface oxidation on carbon and Damascus steel.
  • Apply a light coat of food-safe mineral oil after drying to protect the blade.
  • Sharpen with a whetstone (1000–3000 grit) followed by a leather strop for best results.
