Flexible Fish Filleting Knife — Glide Along the Bone, Never Tear the Flesh
A great fillet knife does one thing perfectly: it follows the fish. This hand-forged Jayger filleting knife has a fine, flexible blade that bends with the contours of the fish, running smoothly along the backbone and lifting clean fillets away from the bone — no tearing, no wasted meat.
Why it fillets better
- Flexible 17.5cm blade – the thin, flexible fillet knife profile gets right up close to the bone for maximum yield from every fish
-
12C27 Swedish steel – hand-forged and heat-treated Sandvik 12C27 for a razor edge that resists corrosion and holds up to daily fish prep
-
Debone, skin and slice – lifts fillets off the bone, strips skin cleanly, and portions salmon and smoked salmon with paper-thin precision
-
Featherlight 80g – moves like an extension of your hand, so long filleting sessions don't tire your wrist
-
Rosewood handle – naturally contoured, warm in the hand, and grippy even when wet
-
Hand-honed edge – artisan sharpened ready to use out of the box
For the fisherman and the chef: ideal for sea bass, trout, mackerel, cod and salmon — equally at home on the boat, in the fishmonger's back room, or your kitchen. It doubles as a boning knife for poultry too.

FAQs
- Is this a filleting knife or a boning knife? It's designed as a fish filleting knife, but the flexible blade also works beautifully as a boning knife for poultry and small joints.
- Will it rust? 12C27 is a high-chromium stainless steel — far more corrosion resistant than carbon steel. Rinse and dry after use and it will serve for years.
- How do I sharpen it? Hone lightly before each use; sharpen on a whetstone when it stops gliding through fish skin.
